I am the mother of two beautiful boys and a wife to a fabulous husband who make my life full in every way. Until my boys were born, I went blissfully unaware as to the damage modern day food choices were having on my body. It took having children with multiple food allergies and intolerances to change the world of food forever.
Between my two boys, we started off having to avoid peanuts, fish, eggs, wheat, and dairy. That’s pretty much everything I had built my food life upon! Starting my journey of managing my children’s health and wellness, I began to understand my own needs for change in my diet.
I am thankful for the children, as they have shown me the way to a healthier life for myself and for my husband (who, by the way, has been better since working through the Low FODMAP elimination diet). I never, in a million years, would have thought an Iowa-raised girl would leave behind her roots and look beyond the cornfields.
Today we are still processing what “healthy” means to us, but as of today, I make 95% of all the food my family eats, and we are Paleo, AIP, and Low FODMAP. We are finally finding the healthcare professionals to help us move beyond these restrictions so we can live healthfully.
This journey has already been wrought with early mornings and long nights prepping food, many hours searching for recipes, and many tears over what to feed my family.
